Lentil Soup with Tomatoes
Makes 6 Serving
1 1/2 cups diced potatoes 375 ml
1 1/2 cups chopped onion 375 ml
6 cups water 1.5 L
5 chicken or beef bouillon cubes*, cut up 5
2 cans (19 ozs/540 ml) lentils, drained 2
2 Tbsp flour 30 ml
2 Tbsp cold water 30 ml
1 cup canned tomatoes 250 ml
salt and pepper
* If your brand of bouillon cube makes 2 cups (500 ml) of broth per cube, use only 2 1/2 cubes
Directions:
1. Turn on stove burner to high heat. Put diced potatoes, chopped onion, water and bouillon into a large pot. Heat to boiling.
2. Then turn heat to low, cover the pot and simmer until potatoes are tender, about 45 minutes.
3. Raise heat to medium. Stir lentils into potato mixture.
4. Mix flour with cold water in a small bowl. Stir into lentil-potato mixture. Cook and stir until mixture boils and thickens, about 5 minutes.
5. Stir tomatoes. Cook 3 minutes longer. Add salt and pepper to taste.
